FAIRFIELD, CT — Four local dining industry veterans have teamed up to bring a taste of Texas to Fairfield with Post Oak Barbecue Co.
The restaurant, which will have a soft opening Tuesday, replaces Brickyard Pub in the historic brick building at 93 Post Road. Diners at the new establishment will be able to enjoy a blend of traditional barbecue and Asian flavors.
“We stick to the roots of how things are supposed to be done,” pitmaster Steve Garrett said.
Garrett had a long career in wine and fine dining before moving to southern Colorado in 2017, where he studied barbecue and ran Obie’s BBQ in Colorado City.
“I’m from the south and I always was interested in barbecue,” he said. “It was always a passion.”

Garrett also spent time in Amarillo, Texas, honing his craft, and returned to Connecticut in 2020. Since then, he and his wife, Elaine Chao, also a partner at Post Oak, opened their first barbecue restaurant, SmokeKing in New Hartford. But Garrett, Chao and partner Eric Patterson had plans to bring their food to a larger space and a bigger market. That’s where Fairfield came in.
“We wanted to get to a place where we could really shine and show what we were capable of doing,” Garrett said.
Post Oak will feature Texas and North Carolina barbecue, such as pork shoulder, lamb, ribs and brisket, all dry-rubbed and smoked with white and red oak wood. Diners will have the option of traditional, diablo and North Carolina vinegar-style sauces.
The menu also includes Asian dishes, such as brisket pho, and both fried and soup dumplings. Drink offerings include a variety of local craft beers on tap, as well as cocktails and wine.

Post Oak customers can expect fine dining service in a casual setting, with decor such as a 24-seat bar wrapped in cowhide, metal paneling and cow skulls.
“It lends itself to barbecue,” Patterson said of the brick-walled building near the border of Fairfield and Black Rock.
Garrett, Chao, Patterson and partner Laura Coronado have a combined over 100 years of experience in the restaurant industry, including owner or manager roles at Taipan in Westport, Little Kitchen in Westport, Chao Restaurant and Wine Bar in Newtown, Chao Restaurant and Wine Cafe in New Haven, and Kudeta in New Haven.
